What’s better than a Tom Collins? A raspberry Tom Collins!
- 2 oz Portland Dry Gin 33
- 1 oz freshly squeezed lemon juice
- ½ oz simple syrup
- 2 raspberries
- club soda
- 1 lemon wheel and raspberry for garnish
Muddle the raspberries in the simple syrup, then add the gin and lemon juice. Shake with ice. Add soda water to the tin and double strain into a collins glass. Top with fresh ice and garnish with a lemon wheel and a raspberry.
