The cooling properties of cucumber and mint make this gimlet a perfect summer drink.
- 2½ oz Portland Dry Gin 33
- ½ oz lime juice
- ½ oz simple syrup
- 6 mint leaves
- 4 cucumber coins, quartered
- 1 mint sprig and 2 long, thin slices of cucumber for garnish
Thinly slice two strips of mini cucumber (cutting longwise) and wrap inside a rocks glass. Next, slice a few cucumber coins and quarter them. In a shaker tin, muddle them with simple syrup. Add gin, lime juice, and mint leaves to the tin and shake with ice. Place a few ice cubes in the prepared glass, then double strain your drink into the glass. Garnish with a mint sprig and enjoy.
