Grab some fennel at the Farmers Market this weekend and you’re on your way to some delicious cocktails! Fennel simple syrup is super easy to make— just follow these steps.
Coarsely chop two cups fennel bulbs and tops. Avoid the fronds as they are difficult to strain out of the syrup. Next, combine 1.5 cups of sugar and 1.5 cups of hot water in a medium sized bowl. Stir until the sugar dissolves. Add the chopped fennel and let steep for 20 minutes. Strain the fennel out of the syrup and discard. Transfer syrup to a container, label and refrigerate.
