This fun fizz is worth the extra shake!

• 2 oz New Deal Gin No. 1
• 3/4 oz lemon juice
• 3/4 oz simple syrup
• 1 egg white
• 1 1/2 oz bubbly water
• 1 lemon peel, for garnish
• orange blossom water mist, for garnish

Add gin, lemon juice, simple syrup, and egg white to a shaker. Tightly seal and dry shake (no ice) very hard for 20 seconds. Unseal the tin, add ice, then shake hard again. Add soda water to the tin and strain into a collins glass filled with fresh ice. Garnish with a lemon peel and orange blossom water mist.

You could skip the orange blossom water but it adds a nice touch. It can be found at New Seasons — just add it to a small spray bottle and mist over the drink.
