Spring is here and so are the cherry blossoms! Gather these beautiful florets for a perfumed simple syrup and enjoy this delightfully floral take on a gin martini.
- 1 ¾ oz New Deal Gin No. 1
- ¼ oz cherry blossom syrup*
- 3 hearty dashes orange bitters
- 1 cherry blossom for garnish
Gently stir all ingredients with ice for 8-10 seconds and fine strain into a chilled coupe. Garnish with a cherry blossom and a long walk.
*Cherry Blossom Syrup: In a pot, combine 2 cups sugar and 2 cups water. Heat the solution until slightly warm— just enough to melt the sugar into the water and then cool. Once cool, add 4 cups of loose (do not pack) cherry blossom flowers. Chill in the fridge overnight and then strain out blossoms. The trick here is cold and slow. Warm water will degrade the delicate aromas. Simple syrup will keep for up to two weeks in the fridge.
