Spicy Lime Grilled Pork

Grilled pork and vegetables are placed on a table with a cocktail and a bottle of New Deal Hot Monkey pepper vodka.

Sugar, garlic, pepper vodka, and tangy citrus juice combine into a dynamite marinade for this spicy lime grilled pork! The acidity and alcohol help tenderize the meat, and the sugar helps it char perfectly on a hot grill. Serve this pork with lots of grilled veggies like corn, peppers, and zucchini, and don’t forget the tortillas!

Ingredients:
3 cloves garlic, grated
1/2 cup New Deal Hot Monkey Pepper Vodka
1/4 cup lime juice
3 TBSP brown sugar
1/2 tsp salt
Freshly ground black pepper
2 lbs. pork (bone-in chops or boneless roast, sliced)
Grilled veggies and tortillas, for serving

Method:
1. Combine the garlic, Hot Monkey vodka, lime juice, brown sugar, salt, and a few grinds of pepper in a medium bowl. Whisk the marinade until the sugar dissolves. Pour the marinade over the pork and swish it around so it’s fully submerged. Allow pork to marinate for at least 2 hours and up to 12 hours.
2. Remove the pork from the marinade (reserving the leftover marinade), and allow it to come to room temperature before grilling.
3. Heat a grill or grill pan to medium-high heat. Brush the grill lightly with oil. Grill the pork until nicely charred on one side, about 7-8 minutes. Flip the pork and pour some of the marinade over the meat. Allow to cook until the other side until nicely charred, about 5-6 minutes, before flipping again to cook off the remaining marinade. Cook the pork until it reaches an internal temperature of 145 ºF.
4. Slice the pork and serve with grilled vegetables, tortillas, and salsa if desired.

Ingredients:

1 oz New Deal Gin 33
1/2 oz New Deal Hot Monkey Pepper Vodka
1/4 oz New Deal Ginger Liqueur
1 oz pineapple juice
3/4 oz lime juice
2 dashes angostura bitters

Combine all ingredients in a shaker tin, fill with ice, and shake until frothy. Strain into a wine glass filled with ice.
