Herbaceous winter cocktail, anyone? Sunny pear brandy and smoky mezcal meet fresh winter citrus in this bright blood orange and thyme cocktail.
- 1 oz New Deal Pear Brandy
- 1 oz Mezcal
- 1 oz blood orange juice
- 1 oz lemon juice
- ¾ oz simple syrup
- 2 dashes orange bitters
- 6 thyme springs
- soda water
- 2 thyme sprigs for garnish
Muddle the thyme sprigs in simple syrup then add pear brandy, mezcal, blood orange, lemon, and orange bitters. Shake with ice and add a couple glugs of soda water to the tin. Double strain into a collins glass filled with fresh ice and garnish with thyme sprigs.
