Basil and egg white add an herbaceous element to this farm fresh cocktail featuring our barrel rested Old Tom Gin.
- 1½ oz New Deal Old Tom Gin
- ½ oz lemon juice
- ½ oz simple syrup
- 2 dashes Black Lemon Bitters (we used Scrappy’s)
- 1 egg white
- 3 basil leaves, two for muddling and one for garnish
Muddle 2 basil leaves with simple syrup in a shaker tin. Add gin, lemon, egg white, and bitters then dry shake without ice for at least 30 seconds. Shake again with ice then double strain into a chilled coupe glass. Garnish with fresh basil.
