Our take on James Bond’s vesper martini. As you know, Bond gives very specific specs on how he likes his drink. After he takes a long sip he tells the barman, “Excellent … but if you can get a vodka made with grain instead of potatoes, you will find it still better.”

• 1.5 oz Portland Dry Gin 33 or Gin No.1
• 1 oz New Deal Vodka (made with 100% Oregon grain)
• 1/2 oz Cocchi Americano
• 2 dashes Grapefruit Bitters
• 1 lemon peel, for garnish

Stir all ingredients in a mixing glass with ice until very cold. Strain into a chilled coupe glass and garnish with a large, thin slice of lemon peel.
