A watermelon mojito is like summer in a glass. This crowd-pleaser blends juicy watermelon, fresh mint, lime juice, and white rum. It’s super refreshing and endlessly customizable—try adding cucumber slices for a spa-like twist or muddle in basil for added depth.
This big-batch fridge door recipe can be made in two different ways. The first, begins with a 52-ounce bottle of Simply Limeade. Alternatively, you can start with any empty half-gallon container and make your own limeade. Some half-gallon containers, widely available from various retailers, are here, or here, or here (which easily converts to a pitcher with this topper).
Method 1
- 3.5 cups Simply Limeade
- 1 ¼ cups strained watermelon juice, from 6 cups cubed, then pureed seedless watermelon
- 1 cup Distiller’s Cut Rum
- 50 fresh mint leaves, lightly bruised
- 1 lime, sliced
- Ice
- Watermelon cubes, lime wheels, and/or mint leaves for garnish
Pour off 3 cups from your 52-oz bottle of Simply Limeade. Add watermelon juice, rum, mint leaves, and lime slices. Seal tightly and shake. Store in the fridge for at least 4 hours.
When ready to serve, remove from fridge and shake vigorously. Add ice to a Colins or Old Fashioned glass, fill with Watermelon Mojito mixture, and garnish with watermelon cubes, lime wheels, and/or mint leaves.
Method 2
- 2 cups strained watermelon juice, from 6 cups cubed, then pureed seedless watermelon
- 5 limes, juiced & strained
- ⅔ cup simple syrup
- 1 cup Distiller’s Cut Rum
- 50 fresh mint leaves, lightly bruised
- 1 lime, sliced
- Ice
- Watermelon cubes, lime wheels, and/or mint leaves for garnish
