The basic process of making vodka is a two-step dance, with the first step being fermentation. This begins by taking starchy, organic grains and encouraging them to sprout--rather like making alfalfa sprouts on the counter top. This natural enzymatic process turns starches into sugars that can be utilized by yeast. Those yeast, selected for a clean taste, consume sugars in a slurry known as the mash, releasing heat, carbon dioxide and alcohol. They keep going until there is no more sugar or they reach about 12%, creating a sort of grain wine that can then be further processed.
